Low Carb Choc Chip Cupcakes

Hey all!

So, these yummy choc chip cupcakes are delicious and have very little ingredients. You probably have most of the ingredients already stored in your kitchen press!
Yes, these cupcakes are high in fat with the almonds and the dark chocolate, however, it is more nutritious than the shop-bought and heavily processed kind.
Each cupcake will have approximately 240 calories in each, which is fairly high for a small snack, so that is why it is important to only have the one and savour it! :)
I like to have mine heated up served with soy vanilla yogurt and topped with raspberries and seeds. Yum!
Ingredients ~Makes 10 cupcakes~
-200g of ground almonds
-125g of 85% dark chocolate chopped in small pieces or dark choc chips (go 70% if 85% is too strong for you)
- 2 eggs (For vegans use 2 tablespoons of flaxseeds or chia in a little a water to get gel like substance.)
- 350ml of unsweetened almond milk
- 1 tablespoon of baking powder (for gluten free use GF baking powder)
- 1 tablespoon of stevia or equivalent natural sweeteners
Method
1. Preheat oven to 170 degrees
2 Put dry ingredients in bowl and then add wet ingredients
3. Mix well with spoon and then add into cupcake cases
4. Bake for about 25mins (depending on your oven)
